I buy bananas just to see them turn brown, which means only one thing...banana bread!
As you know my name is Anna, and what better snack for Anna than Banana (bread)!
I've tried many recipes online and made up a few; this is my favorite.
Ingredients:
Flour; 2 cups (or 250 g)
Baking soda; 1 teaspoon
Salt; a heaping 1/4 teaspoon of Diamond Crystal Kosher salt
Cinnamon; 1/4 teaspoon
Unsalted butter; 1/2 cup (or 115 g) at room temperature
Brown sugar; 1/2 cup loose (or 1/4 packed)
Eggs; 2 large at room temperature
Plain full-fat yogurt; a couple heaping spoonfuls, about 1/3 cup
Bananas; 2 brown, 1 ripe (or all 3 can be brown, just reduce the sugar slightly ~1 tbl)
Sweet potato; medium size, baked
Vanilla extract; 1 teaspoon
Walnuts; about a cup
1. Position rack to the lower third of the oven. Preheat oven to 350 degrees Fahrenheit.Â
2. Get 2 bowls out, one for wet, and one for dry ingredients. Get your electric mixer if you feel fancy.
3. Combine flour (2 c), baking soda (1 tsp), salt (1/4 tsp), and cinnamon (1/4 tsp) in one of the bowls. Whisk it all together.
4. Combine peeled medium baked sweet potato, 3 brown bananas, brown sugar (1/2 c), vanilla (1 tsp), and a stick of butter into the other bowl. Mash it all up. I used a potato masher and electric mixer, but fork, back of spoon, spatula will do. The butter won't fully mix it, but it will be fine when it bakes. Alternatively, do it in stages starting with butter and sugar and then add in the rest in stages.
5. Add eggs one by one and beat into the wet ingredients, but as when baking do not overbeat/mix the eggs.
6. Stir the plain full-fat yogurt (about 1/3 cup) into the wet ingredients.
7. Stir in the dry ingredients a quarter cup or so at a time.
8. Stir in the walnuts (1 c).
9. Pour batter into a silicone loaf pan, or a greased metal loaf pan, or equivalent.
10. Bake between 60 and 65 minutes, testing by sticking a knife in the center of the loaf for it to come out with no uncooked batter. Consider covering with foil after 30 to 40 minutes.
11. Wait for it to cool....just kidding. Eat right away while it's warm with a cold glass of milk.

Omit sugar and add 1 scoop of vanilla protein powder.
